The Bright Side


It was a long, not-so-good weekend because of drainage issues and 7" of rain over the past three weeks (can it PLEASE stop raining now?), and I'm trying to muster some optimism that this week is going to be better. However, it's Monday morning and my optimism is in short supply.

Coffee helps. So I'm going to keep it flowing. Baking, too. So I think I'm going to try making some gluten free cinnamon muffins. Then I'm going to try and look on the bright side of life, and make this week wonderful.

I can do it. I CAN DO IT.

  2. Yes, you can do it! You are right, baking helps. The act of baking, yes, but also the yummy smells and then the enjoyment of eating something yummy prepared by you. I hope you get over your case of the Mondays. If you have a favorite gf muffin recipe, can you share it? I've been buying a great gf baking mix for muffins that is very yummy. I am so ready for pumpkin everything and am on the prowl for yummy gf pumpkin recipes.

    1. There is something therapeutic about baking, isn't there? I haven't tried this particular recipe yet (found it online), but I'll share if it turns out well. I'd love a GF pumpkin roll recipe. Nom nom. I did make a gf apple crisp a couple of weeks ago, and it was *delicious.* I'm sharing that recipe on Mystery Lovers Kitchen at the end of the month. Really, it's just a GF take on the Betty Crocker version. :)
